Where to get proper Chicharrones?

Just as it says. I don’t want just the pork skin, I like the fat on the back. Fiestas are too thick (I don’t want edges of meat), everything at HEB is too thin, and I like them made in-house, not prepackaged. What roadside stand/hole in the wall spot do I need to visit?
