Where can I get good tripa tacos (preferably NW side)

I love tripe tacos from taco trucks. You know what I mean. Corn tortilla, cilantro, onion, spicy oily salsa verde, and beef tripe. I used to drive around a lot for a living and would just stop by a Taqueria Jalisco (if it says Jalisco, seems to be that they know what the f**k they're doing, and they're cheap), but I have forgotten where that truck is. Problem with trucks is that they move. Then the problem with tripe is that a lot of the time you get shitty tripe (hard, not prepared correctly). OR then, they charge way more than the other meats.

I recently found a taco truck that had it fresh and prepared JUST RIGHT, but before I could buy some tripe tacos from them a third time, the truck vanished, and now it's gone.

Going crazy over here. It's a comfort food. I was having a particularly rough day one day, and stopped to get some truck tacos, and said why not try this tripe stuff, and it was fuckin' amazing.

WHO KNOWS WHAT THEY'RE DOIN WITH THE TRIPE TACOS? NW HOUSTON PREFERABLY?
