What am I sleeping on?

One of my favorite things is trying something new for the first time. What are some dishes that are only offered at a few places around Houston that are good but not well know or a rarity. (Some examples: Burmese food, Booza, omurice, etc.) Looking for something that will be more ethnic than some type of twist on something popular.
