Visiting for a couple days – what’s mandatory?

I'm visiting for a few days in early April and I always like to try local food that's very specific to that area… I've heard a big thing in Houston is Viet-Cajun. Any recommendations within that style, or in general?Traveling solo if that helps inform your answers. Thanks in advance!
