Unique dining

There are some dining experiences that I think everyone should try at least once. Places where the dining is more than sitting at a table and ordering from a menu. Some examples are Brazilian steakhouses, revolving sushi, dim sum, hot pot, Korean bbq, hibachi, kamayan feast, etc. What are some more of these type of dining experiences that I’m missing (Houston or elsewhere)? I know there is a revolving cheese place in Nashville, there is a place in Atlanta where each chef is responsible for a dish and tries to sell you on their dish, I’ve heard of a DIY breakfast hibachi place, I would include COSM in Dallas – these are the types of places I’m looking for (not really interested in the Michelin rated creative type of places)
