Hello guys! I'm just a asian dude who loves Mexican food so much. I'm trying to find and eat uncommon Mexican dishes in any part of Houston. I'm talking about if Houston have a food version of "Iceberg Theory levels" . Let me know any recommendation

I already found Torta de La Barda is a traditional torta from Tampico Tamaulipas from Torta de La Barda food truck in Spring branch. Oaxacan food like crickets from El Alebrije food truck (now have a new location ). Las Chenchas with their blue tortilla and Huitlacoche. Taqueria Buey Y Vaca selling their brain meat tacos.
