Training for a long, high elevation hike in a very flat, very close to sea level city??

I’m getting ready to hike around in Peru (very high elevation) in a few months and understand that prepping should involve lots of hikes/walks/runs with elevation changes. I’m stumped on where to find that in the Houston area. Can anyone recommend some spots with hills to walk around?

Alternatively, are there any tall buildings open to the public where I could walk up stairs? Perhaps with a nice view or open air so I don’t get bored out of my mind? 😅

Im usually (but not always) working out solo so spots on the more populated side are preferred. Im not from here, and I feel like I’m missing something obvious … all recommendations are appreciated!
