Top ‘Houston-y’ restaurants? Best gumbo/po-boys/fried chicken (bone in, tenders, sandwiches) affordable (casual) seafood/crawfish/burgers.

My dumb self forgot to include these foods in my last post and since y'all were so much help last time I thought I'd reach back out for more feedback.

In terms of 'fusion food' if there are any places that you think are particularly emblematic of Houston's 'melting pot' culture would be awesome. I'm thinking along the lines of JQ's 'Tex-Mex BBQ, Crawfish and Noodles, Khoi Viet-BBQ.

I've heard crawfish season is going to be fairly weak this year because of the late freezes but still interested in possibly getting into some.

I've had Treebeards gumbo but thought it was just okay so looking for other options. Also have plans for going to get the fried chicken and maybe more from Himalayas.
