Tips on preparing plants for winter?

Only things I know to do is mulching to keep the ground warm, cutting dead branches or leaves after a freeze, and pruning in late winter to prepare new growth for spring. Does anyone have other suggestions? Also are there plants common in Houston that require different than standard care?
