Suggestions for a 2-3 day weekend trip FROM Houston?

Preferably places with some nice scenery/nature. Been to Galveston, San Antonio, Austin, Dallas, Nacogdoches countless times. Not much of a gambler so not really interested in Louisiana. Any other suggestions?
