Small event in Houston that says “Texas”

I'm hosting a small (20-30) group of people coming in for an annual business meeting. We take turns hosting and everyone plans a “unique to their location” event. The meetings and guests will be downtown.

Any ideas for me for an event that is not too far from downtown, but that says “Houston”? As an example, in Philadelphia we had dinner with the founding fathers as waiters. In Monterrey, CA we toured the coastline for a couple of hours.

I’ve looked into NASA but their spaces look too big for my small group. Not looking for escape rooms/cooking classes/axe throwing.

The idea would be to go to someplace fun then go to dinner.

If you have ideas I’d love to hear them.
