Restaurant recommendations!

Howdy y'a'll, my dad's birthday is around the corner and he had told my girlfriend and mom that he wants to try a restaurant that specializes in cuisine that uses a lot of bell peppers. I can't think of anything that could satisfy that need, but I'm hoping you can. Please & Thank you !
