Recommendations for weekend vacation with mom

Hi! My mom (48) and I (22f) are heading to Houston the weekend of Oct. 8th for a Gabriel Iglesias comedy show. My mom dedicated her life to her kids and her job (teacher for 25+ years), and now that me and my siblings are all adults and live in different cities (I’m the closest at 1.5 hours away), she doesn’t get out to do much. She asked if we could make the show night into a weekend trip to spend time together, and I want to make sure it’s really fun. She doesn’t really drink and isn’t a fan of bars. I feel like escape room type things are too group oriented. Looking for recommendations on events/ fun things to do/ fun restaurants for the two of us! We’re staying around NRG stadium if that helps.
