Recipe Exchange – Comfort Food Quarantine Edition

Since I'm assuming most of us are cooking at home now more than every before, what's been going on in your kitchen? Have you had to make any recipe substitutions or adjustments you wouldn't normally? What have been your go-to comfort dishes, snacks, and/or drinks?
