Opening a new food truck in Houston, and need help!

Hey everyone! I have a simple but lengthy question, and need some help deciding between a couple options for my new food truck that I will be setting up in Katy soon (by Fry road and i10).

I am trying to decide on the concept I will be basing my food truck on, and I am a little bit conflicted on what would be the best idea between these three options.

I have experience in the food industry, and I have a brother who is a chef that I am also very confident in. So from the food standpoint, all these options would deliver top quality items and amazing flavors! Keep that in mind when commenting on what would be the best option here… Here are the options:

  1. Nashville Hot Chicken food truck that sells chicken sandwiches, loaded fries, tender baskets, 3 or 4 milkshake flavors, and some other small bites (mac&cheese, and fried pickles).. basically something kind of similar to Mico’s. My only concern with this concept that there is a lot of hot chicken spots in Houston, and I’m wondering if people might react badly to another hot chicken place opening.. I looked around in Katy, and I haven’t seen that many places that sell Nashville hot chicken (maybe 2 or 3 places)

  2. Chicken Joint food truck that will also sell the items mentioned above, and maybe add 1 or 2 other items. The difference between this and the first option is that this concept won’t be labeled as Nashville hot chicken.. I would still incorporate spices, and offer 3 spice levels next to the No spice option. Rather than having 4 or 5 different spice levels if I would to go with Nashville hot chicken route. My thought with this chicken joint concept is that it will maybe attract a wider range of customers that not only want hot chicken. The conflict with this very thought is that hot chicken has also been pretty popular lately, and I wonder if people have enough and ready to move on from trying a new spot, or if they would still be interested in a new hot chicken place (trying to maximize my sales deciding between these 2 options)

  3. Wings truck. Pretty much selling naked or breaded wings (about 6-8 flavors), fries, Mac&cheese, and fried pickles. It will also include 3 or 4 different milkshake flavors. Totally different than the first 2 ideas but I am still very confident in the wings quality, and flavors we will be doing.

Now that you all have this information. What do you think is the best option to go from these concept, and why?
