One night getaway recommendations

Hey folks –

My lovely wife and I (early 30s) are expecting a new addition to the family sometime before Halloween. As a very kind gesture, my MIL has agreed to travel down and watch our one year old for the night so that we can "get away" for a bit. We live out in Katy, so the plan is just to find a nice hotel somewhere in the Houston area, grab dinner, and find something to do to finish the evening. With life, work and and all the fun stuff that comes with it, it's been about 7 years since either of us have been on vacation of any kind, so I'd like to make this a really special memory for my wife (plus it's her birthday next week!).

My general thoughts so far:

Location

• Needs to be <= 1hrs drive from the general Katy area

Hotel/AirBnb/whatever

• somewhere nice, I'd like this to be a cool memory we can look back on
• I'm not really concerned about the cost

Food

• Expensive, cheap doesn't really matter as long as it's good
• limited time to get a reservation if I need one (trying to target next Saturday the 30th)

Afterwards

• Something fun but lowkey to cap off the night
