Old school cheese enchiladas!

I used to love a place on Crosstimbers called Mexicatessen, but sadly it closed. Ever since then, I have been on the hunt for old school cheese enchiladas made with cheddar cheese not queso.! Finely chopped fresh onions and brown gravy not red.

Anyone have suggestions?
