Must do’s in Houston?

I may have the chance to spend a long weekend in Houston in August and would like to spend a long weekend to explore. I started this itinerary of things to see/do/eat but would appreciate any local recommendations! Definitely open to BBQ recommendations, but recommendations for other cool experiences/sights/food/etc. would be awesome.
