Hi Chance, Let’s talk about principles and values – what matters to you most?
Treat people the way you want to be treated. I believe it is that simple. In my business it means so much since we interact with people on a daily basis. We sometime only get 1 shot to make turn that guest into loyal guest and if you treat them any differently than the way you would like it might hurt you in the long run.

What should our readers know about your business?
Olreans Seafood Kitchen was started 12 years ago with the intention to just provide quality of food from people you know. Marcus and I work, live and play in the community. We know all about the Houston restaurant scene. we know it takes hard work, but if you can treat people with respect (like your employees) you will have a foundation to work from and that is where it starts. Easy no manageable yes once we got the foundation in place. Having a staff who believes in you and your product makes our goal of being known for Houston’s top cajun seafood restaurant a little easier but I stress little easier because the restaurant business changes so quickly making at times hard to maintain that spot. Without a doubt our gumbo has made us who we really are today. When you have the name Orleans in your logo you better bet you need a strong gumbo to associated with that brand and we do.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
We would start with a round of golf at any of our great courses here in town then lunch at Pico’s to get the signature soft shell crab and the Alto rita. Once we have taken a nap because if the rita We would end then head to Pappas Steakhouse for an amazing dinner. Tap the night out at Cottonwood. Then repeat Ha

Who else deserves some credit and recognition?
It can’t be said enough my wife Michelle. Her commitment to me starting this new business and of course her hard work as a new mother and business women while I was starting this business is truly a blessing. Of course my business partner Marcus Payavla who is a great business partner of 12 years. We have similar styles of ownership, but also many contrasting which is why I feel we have been successful.
