Looking for the absolute best high end dining experience

What up y’all, I’m looking for the fanciest, tastiest, and memorable restaurant for me and someone who loves dining in fancy restaurants. I’m not much of a restauranteur (Mambo’s and Timmy Chan’s will do for me), but because she is I want to absolutely blow her mind with the fanciest of dinners she’s had in this city. Price is not of the matter, but I don’t want to take her to places like Nobu, Del Frisco’s or even B&B as these are places that are too well known for her taste, or we’ve already been. What’s the best kept secret in Houston fine dining?
