Looking for sushi recommendations akin to Sugarfish (Los Angeles)

I recently went to Sugarfish while visiting LA, and now I am on the hunt for a similar sushi restaurant in Houston, TX. As a heads up, I have been to RA, Uchi, Uchiko, and Nobu. Uchi was pretty good; however, I am particularly interested in what is essentially “pre fixe” sushi (like at Sugarfish).
