Looking for cookbooks/websites with recipes that are similar to the great Indo-Pak food I’ve had around town.

Copy Cat Aga’s would be great….

I like to eat a favorite dish at a few places then recreate it home. The problem is when the recipes I find are so far from what I’m trying to just recreate then tweak to my liking.

I have Anita Jaisinghani of Pondicheri cookbook, Masala. A lot of history and great info but the recipes are a refinement of the originals. The book is great for step two once you know the basics.

I also have Masala Lab: The Science of Indian Cooking but it’s more science and Southern Indian.

A lot of the websites are woefully under spiced or don’t have access to 6 Indian grocery stores within 3.5 miles like I do.
