Local chefs team up to open banh mi restaurant in Katy Asian Town

When chef and restaurant owner Alex Au-Yeung expanded Phat Eatery in Katy Asian Town four months ago, he only used one-third of the 2,250-square-foot space.

However, he didn’t know what to do with the remainder of the space, located next to his Malaysian restaurant, at 23119 Colonial Parkway, Suite B-3. 

It was not until he chatted with friend and Peli Peli founder, Thomas Nguyen, that he realized there wasn’t a banh mi sandwich shop in the Katy area, according to a March 11 press release.…
