Layover advice

I have a few hours layover between two international flights at IAH, arriving 5:30am on a Thursday and flying out again at 8:00pm (so probably need to be back at airport around…6pm?)

I'm a solo female traveller, in case that is relevant. I've never been to the states before, so pretty much everything is new. I'm interested in food, museums, possibly a little shopping?
