I’ve been missing Doyle’s Golden State Po-boys

For whatver reason, I've been having a craving for them recently but sadly they closed years ago. Chicken breast, swiss, avocado, tomato, lettuce, mayo (and I added bacon) on an extremely crusty flaky po-boy bun, the likes of which I haven't seen anywhere since except used for banh-mi. Anyone have any ideas on a sandwich like that? (or failing that, someone selling po-boy/banh-mi rolls/baguettes so I can try making it myself? I tried with Kroger french bread, but the baguette is nowhere near as flaky and I feel like the bread alone weighed as much as the original sandwich.)
