Italian sandwiches

What I would like is an Italian sandwich on soft Italian bread, salami, proscuitto, maybe another Italian meat, provolone, shredded lettuce, onion, sweet and hot peppers, pepper, oregano, vinegar. A Blimpie’s Best, but higher quality like in an Acela Corridor Italian deli.

Any place in Houston offer that? Can’t even find sweet peppers in a grocery store. Home Slice is the closest I’ve found so far but they overwhelm the sub with mayonnaise and don’t offer sweet peppers.
