I have a (Genuinely) long layover (For real this time). What would be your best ways to spend the day?

I tried searching for some quick posts but most people have layovers under 12 hours and you guys are limited in what you can tell them to do.

I would be arriving on a Saturday at 10:30am and leaving the next morning at 6:10am on a Sunday. I'm going to grab a hotel, but as far as traffic and things to do, what's available for me?

I'll be uber-ing most likely.

I haven't booked yet and can always get a direct for a little bit less, but I figure if possible, why not spend the day in another city and check it off my list?

Or how would you, a local, spend 19 hours in Houston? What would be your itinerary?
