Houston recs plz

I'm visiting Houston for 3 days and planning to eat my way through the city! I'm renting a car, so distance isn't an issue. I'm coming from San Diego and really want to try some authentic Southern and Texas staple foods. Any must-try spots or local favorites or fav food trucks?
