Hotel/Apartment with rooftop

I’m planning a 30th birthday for my best friend who lives in Houston but I do not. She would like to have a rooftop vibe probably with a pool but not a must. Does anyone have any recommendations of hotels or really nice apartments that rent out their rooftops that I can use for the celebration?
