Homemade Charcuterie or Ploughman’s Platter?

Back when Treadsack was operating multiple top tier restaurants, their place Hunky Dory had a delicious appetizer platter with homemade meats, pickles, and dips. It was delicous and the platter had different ingredients everytime! I'm looking for something like that -any suggestions?
