Great individual dish in Houston

Sorry if I missed it, but I've seen many posts about best insert nationality cuisine restaurant, or best restaurant. But we all know that even great places have menu items they aren't good at, and even bad restaurants are known to make a good item.

My question, regardless of everything else good or bad, what are your favorite dishes from where.

FYI, this is inspired by my life long journey to find a great country fried steak, I've had a few 7/10's but never anything great.

Also, my submission is Taiwanese Beef Noodle soup from Tiger noodle house, IMO best thing in Houston.
