Give me your opinion (restaurant edition) – Does Houston have too many coffee shops?

I have some ideas coming to me about starting a business and it semi involves running a coffee shop as part of the business. I want to understand the demand. Are there too many coffee shops in Houston? What would make you go to a boutique coffee shop in town?
