Food Truck and City of Houston Permits

We are considering opening a Food Truck. These permits for Houston seem a bit extreme.

WE ARE NEW TO THIS AND DOING OUR RESEARCH.🧐

Do you have to do an in person run down of how and where the food will be cooked, showing what you’re using in the food truck?

If you are someone actively going through this process for 2024 I would love to get your feedback. It seems like they have changed and updated the requirements.
