Finally going to Houston please recommend your absolute favorite dishes and restaurants

I am trying to have the best foodie trip ever. All cuisine reccomendations are welcome I am an adventurous eater but I really want to try authentic Mexican and think Houston should try a few I also love Indian and Thai cuisine. Thanks a lot.
