Fast Casual Korean thoughts

In the works of potentially opening up a fast casual dining Korean cafe in Houston. Bibimbap, cold noodles, kimbap, etc. like to think of it as a Korean version of Chipotle.

Would love to hear your thoughts on if you think people know/appreciate Korean food enough for it to be a demand in the loop(thinking Montrose/Heights/Washington).
