Fans of Uchiko’s Smoky S’Mores Dessert Can Now Get It in Ice Cream Form

Executive pastry chef Ariana Quant captures Uchiko’s smoky cooking techniques, along with the last bits of summer, in pints of S’mores ice cream

Austin chef Tyson Cole’s Japanese restaurants Uchi and Uchiko are typically lauded for their top-notch sushi offerings. Still, their desserts have acquired a cult following — so much that the restaurants offer them in ice cream form.

Ariana Quant, the executive pastry chef at both Uchi and Uchiko, spearheaded the launch of Uchiko’s new ice cream flavor s’mores, which is available in pints exclusively for takeout. The inspiration for the nostalgic flavor was driven by the Uchiko kitchen’s variety of cooking tools and techniques centered on smoking and the restaurant’s previous presentation of the nostalgic childhood dessert, according to a release. Launched on August 9, the new pints of S’mores feature a sweet and salty base of toasted marshmallow ice cream that’s mixed with miniature toasted marshmallows, crispy bits of chocolate, black sesame pralines, and a dash of sea salt. Diners interested in securing pints can purchase them at any of the Uchiko restaurants for takeout or have them delivered through Uber Eats. Pints cost $12.50 each.

The frozen dessert is a follow-up to Quant’s first ice cream drop. Released last year, Quant’s pints of Fried Milk ice cream — a combination of salted fudge, toasted blondie, dulcey chocolate, and cornflakes — are similarly inspired by Uchi’s dessert of the same name, a plating of fried milk, Cap’n Crunch cereal, chocolate mousse, and toasted milk ice cream. Pints of the Fried Milk ice cream are still available at Uchi’s locations for $12.50.
