East Asian/SE Asian vegan options

I live in a place where there’s not a lot of good/authentic East Asian or south East Asian vegan food and would love to have some while I’m visiting houston. Doesn’t have to be a fully vegan place but a could be a place with a super solid vegan option! Would specifically love any recs of those since I miss these the most: chinese, Korean, Vietnamese, burmese, Indonesian, Laotian, country Japanese (not sushi or ramen).

Also would be open for any recs that aren’t burgers, salads, Mexican, new American, health bowls. For instance, my home city had really good American Indian/Native American restaurants, west African, and Caribbean food that I also haven’t had in years so miss those cuisines a lot.
