Driving from Az To Houston, anything to avoid?

Hi all, next week I’m driving with my family from Arizona to Houston. We have never been in Houston (or Texas really) so while exciting, I’m not sure what to expect. We plan to take I-10 from the beginning.

Is there a city/ area we should avoid? Is there a major desertic area I should consider (like: I won’t be able to even get gas from this place to this place so I should ahead) It’s a 14 hours drive according with google maps. We might need to stop at some point and spend the night (driving is no issue, but 2 kid under 4 might…). Could Sonora or Junction good options? Or should we wait till San Antonio? Any other tips? Maybe something COVID related I’m not considering?
