Discovery flight recommendations

Looking to purchase a discovery flight as a gift. We're in central Houston so most suburbs are equidistant. Most important is that it's reputable, safe, and enjoyable. Not looking for a "deal" but rather a great experience. Has anyone done this recently and where would you recommend?
