Butcher recommendation?

Now I regularly pickup bulk cuts at Costco or hit La Michoacánas for cheap yet delicious pre marinated chicken and beef fajitas, but I occasionally want to treat myself to big ass fancy custom cut steak or a picanha for the fam. I’m lookin for a true to form old school butcher that can do custom cuts, off cuts, marrow bones all that. Somewhere you walk in, see a guy behind the counter and tell him what you’re looking for and he can get it for you. Everywhere else I’ve lived has had places like this for butchery or fish markets, but can’t seem to find a good one here. I’m around BW8/I10 but due to the fixing being occasional in nature, location does not rule something out.
