Avant garde/experimental dining experience?

Hey y'all. I'm looking for a unique or even weird restaurant in the Houston area. I've googled it and so far I've come up with Eculent and Degust. Any other recommendations? I've read reviews for Eculent, and they're mixed.

I've done so much fine dining, and it's all great. But I want something interesting and maybe a little challenging.

Price isn't really an issue, but probably no more than $400pp.
