I thought it was great. It would have brought discussion about the unique joints we have, unique and creative styles, etc. I’m not into chain burgers like 5 guys, in-n-out, shake shack, smashburger. I want to hear about the local joints like Hamburger Palace, Wolf’s, Someburger, Killen’s Burger, etc. I’ve lived in Houston 40 years and still feel like I haven’t experienced half of it in culture and food.

Planning a catered event and want to up the game on the regular grilled cheese sandwich quarters as an app for the guests. This is for some 40-50 YO folks before my wife and serve them a buffet of smoked wings, grilled wings, sliced brisket, and St. Louis (that we cut from spares) pork ribs.
I’ll pair that cheese with Asiago and then pan-grill the sandwiches on either brioche or pretzel sandwich buns. I maybe need 1lb/450g, not planning a big event, 30 people tops.
Wife’s got the sides already planned – crispy pork belly chipped mac-n-cheese, pancit lechon, etc.
I just need some cheese!
