Aside from Agora, why aren’t there more cafes open late past midnight in Houston?

I'm talking about coffee/tea cafes, not hookah spots or bar/club like places (and yes, I'm aware a few places are open slightly later on weekends).

I feel like there used to be more options before the pandemic, but this is the only place I'm familiar with inside the loop, and it's always way too packed for my liking.

I figure it's a hassle for cafes and businesses in general to be open late, but in a city as big as Houston, I feel like there has to be a huge market for this kind of thing. But can anyone share more about why this may be? And if there are more places open past midnight in Houston?
