Another confusing Chris Shepherd concept

I don't get the hype around Chris Shepherd. I mean I appreciate what he has done for the Houston food scene and I am totally down for Southern Smoke and what he is doing with that. As far as his restaurants go, I have feel they are always overrated. This new restaurant, in the Farmers Market, takes the cake. Who opens a restaurant serving a $42 wagyu chicken fried steak at a farmers market with a heavy Hispanic demographic that, more than likely, can't afford to pay $20 for a chicken fried steak. Along with that, who pounds and fries a wagyu steak? This seems more appropriate for The Heights or Rice Village Farmers Market where the majority of the vendors are white girls hocking hibiscus lemonade. I hope one of the chefs chime in, I would love to understand the reasoning here. I still don't get it.
