Aaron Bludorn to Open New Restaurant in Anticipated Montrose Hotel

Named for the meteor shower that peaks in August, Persied will pay homage to the international flavors that define Houston

This fall, chef Aaron Bludorn is opening his fourth restaurant inside the anticipated Montrose boutique property, Hotel Saint Augustine. The Austin-based hospitality group Bunkhouse is set to open the hotel later this year.

“The restaurant is going to be a Gulf Coast bistro,” Bludorn says. “It’s going to be a fun meeting point for Houstonians to come and enjoy French-inspired food with a Gulf Coast bent.”

With a nod to Houston’s space exploration roots, the restaurant is named for the Persied (pronounced “per-see-id”) meteor shower that occurs during July and August of each year. In conjunction with longtime partner, Cherif Mbodji, Bludorn will operate the restaurant and bar, extending a growing restaurant imprint that includes Bludorn, Bar Bludorn, and Navy Blue. While menus are still being developed, Bludorn says Persied will pay homage to the international flavors that define Houston through breakfast, lunch, dinner, and weekend brunch.

Persied will over Gulf Coast favorites with global influences.

“We’re really excited because it gives us the ability to reach guests in a different way, including folks in town and travelers to Houston.”

Furthering its ode to Space City, rotating, seasonal cocktails will be named for Montrose icons and city history, while wines will be sourced from small producers and family-owned wineries around the world. The New York and Wyoming-based design studio Post Company collaborated with Bunkhouse on the restaurant’s design, which features ombre-dipped wall treatments, textured eclectic furniture, and Art Déco inspired pendants.

Spread across five small buildings over two floors, designers sought inspiration from the classic and contemporary elements of the Montrose community to design Hotel Saint Augustine. The hotel will feature 71 rooms, indoor and outdoor seating at Persied, an intimate lobby bar, a small event space, a circular courtyard pool, and a listening room.
