Barbecue and Texas go hand in hand…heck, BBQ and Houston go hand in hand. The inspiration for this article about BBQ in Houston started with a visit to Chuck Wagon BBQ. Houston’s Great Eats went out there to do an Eats Feature and I was so blown away by the innovation of Chef Waseem that I decided to create an article about BBQ here in our town.Â
Sure, I could do more Eats Features and interviews with the best BBQ spots in town, but I wanted a mix of opinions. I created a post to find out what the expert home BBQer thinks about the process and what makes the best BBQ. I decided to post about it on Facebook and the amount of comments I received were insane – I really appreciate everyone’s support in creating the content for this article about BBQ. Four Different Styles of BBQ
There are four main regional styles of barbecue in the US and for some reason, each Master Griller believes their style is the best version in the land…and we can’t help but agree with every one of them. The four main regions consist of Carolina, Memphis, Kansas City and Texas.

Balance makes great sauce. I like a lot of different sauces. And I don’t mind the regional differences. I like the vinegar and mustard sauces you find in the southeast. They pair great with the pork products that dominate that region. I particularly like Roegels BBQ mustard sauce lately. It’s not quite as acidic as you would find from east Carolina’s but it is very good. I tend to like thicker sauces. I’m a fan of Sweet Baby Rays and there’s a reason it’s the top sold bbq sauce. It’s sweet and a touch of backend heat. It has great balance. A sauce that has been a favorite of mine since I was a kid is City Market in Luling. It’s a thinner sauces and a little more acidic than you would typically see in the region but it pairs great with their sausage and cuts the fat quite well. John Brotherton of Brotherton’s Black Iron BBQ and Liberty BBQ has produced several great sauces. Amongst my favorite is Alabama white sauce. It’s hot but there are times where I will put that stuff on just about everything. You will talk to some that say sauce is not needed with great bbq. While I enjoy my cue without sauce 90% of the time there are times where I get a hankering for it. I’m not afraid to add a little here and there and I enjoy it when I do.
