Global Entry enroll on arrival (IAH or HOU)

*Also would do enrollment on departure if possible!

Girlfriend and I will begin traveling out of the country more often beginning the week of Thanksgiving, global entry finally makes sense for us so we are curious if anyone has had luck with getting an interview upon arrival/application for global entry at either airport. I've heard of insane wait times for an interview so if we can expedite the process by doing it upon arrival we would absolutely go that route.
