Gameday cooking/meat smoking thread
Morning y'all!
The fire is starting up, coffee is brewing, just about to trim the ribs and get them slathered and rubbed. Its gonna be a good day, I can feel it in my bones. And I'm so happy to be back at the smoker!
Edit 1: Just tossed these bad boys on about 10 minutes ago. Really simple rub, salt and pepper base with garlic powder, onion powder and ancho chili powder.
Edit 2: About an hour into the smoke now. Temperature has been playing a bit more ping pong than I like it to, not sure if its because its 42 degrees this morning in Illinois or because I was away for 2 weeks and my smoker missed me, so she wants more attention.
Either way, think I've got it rolling consistently between 270-285 like I like it, so should hopefully be smooth sailing from here.
