Japense buffet with pen and paper?

There's one in Pheonix and one in AL I went to. Where you're limited to like 2 hours… You're given a pen and menu paper… And check the box of what you want. You're given the items and a new paper to fill out what you want again. I'm not sure what this style of dining is called, but is there one in Houston? Dosnt necessarily have to be japense.
