Taco bar catering recommendations

My son is getting married in Houston in August. I've not been there yet. (He and fiance are from West Coast, we're in Midwest, but she has some family there, so we are all going to TX) They're going to have a pretty 'generic fancy' wedding, so I would like to have a good taco supper for rehearsal dinner. Need a good place that can set up a taco bar in our hotel banquet room for rehearsal/out of Towner's dinner. We're already paying a large portion of the wedding, so economical would be a huge bonus.
